The Level 4 Award in Food Safety Management for Manufacturing is a five-day course, aimed at those who have responsibility for supervising and managing food safety in businesses which handle food.
The course is a regulated qualification and accredited by Highfield Qualifications.
Run as an in-house course at your premises, or remotely on Zoom, we can train your team.

Course Details
Level 4 Award in Food Safety for Manufacturing (RQF). Five-day course with regulated exam.
This course is suitable for:
Anyone with responsibility for managing food safety in food manufacturing premises.
Duration and assessment:
This course is a five-day course and is assessed by a multiple choice exam and written exam.
If completed remotely, the course uses blended learning; a precourse workbook to complete prior to the course with the use of the course text book. The course is then delivered over five Zoom sessions, with the exam completed remotely, online using a remote invigilation app.

Course Content
The course will allow candidates to:
- describe key food safety terms
- list the most common causes of food poisoning and describe methods to reduce the risk
- outline a managers role in a food premises regarding food safety legislation
- Develop a positive food safety culture within the workplace, and describe the elements the constitute a positive food safety culture
- Describe the HACCP principles and the prelimary steps involved when setting up a documented food safety management system (HACCP)
- Explain the role of a manager and an environmental health officer in dealing with a food poisoning investigation
- Describe common food poisoning bacteria and food-borne diseases, and describe the controls and monitoring that should be in place
- Give examples of non bacterial food poisoning
- List the responsibilities of a manager regarding pest control
- Describe the legal requirements for food hygiene training and HACCP training in food businesses
- Give examples of factors that may afffect microbial growth and survival and describe the significance of spores & toxins
- Describe cross-contamination and give examples of what can be done to prevent contamination from E.coli
- Outline the features of an allergen management policy
