The Level 3 Award in Food Safety in Catering is a three-day course, aimed at those who have responsibility for supervising food safety in businesses which handle food. 

The course is a regulated qualification, accredited by Highfield Qualifications and MCA recognised. 

Run as an in-house course at your premises, or remotely on Zoom, we can train your team. We also run regular open courses. 

Previous candidates includes groups of chefs, supervisors in a diner, chefs who work on super yachts, and managers of food premises.

Course Details

Level 3 Award in Food Safety for Catering (RQF). Three-day course with regulated exam.

This course is suitable for:

Anyone that is responsible for supervising food handlers in a variety of catering premises. Suitable for chefs, supervisors and managers in food premises, owners of food premises and more. 

It is recommended that candidates have previously completed the Level 2 Award in Food Safety. 

 

Duration and assessment:

This course is a three-day course and is assessed by a multiple choice exam with a pass mark of 30/45.

36/45 and above receives a distinction.

If completed remotely, this course is delivered using blended learning; precourse work and three one-day Zoom sessions. The exam is completed online at the end of the third day, using a remote invigilation app.

Course Content

The course content will enable candidates to:

  • have an understanding of food safety legislation regarding food premises
  • understand the requirements for implementing a food safety management system based on HACCP principles
  • Understand a supervisors role in ensuring good personal hygiene standards are maintained
  • Describe the procedures necessary to prevent contamination of food
  • measures required to control allergen contamination
  • Outline the characteristics of common food poisoning bacteria and food-borne disease
  • Describe common causes of non-bacterial food poisoning
  • Outline the key temperatures that are relevant to food safety
  • Describe a supervisors role in pest control
  • Describe the procedures that should be in place to ensure effectrive cleaning and disinfection
  • Explain a supervisors role within a food premises regarding the safe delivery, storage, preparation and cooking of food
  • Describe the process of cross contamination and how it may be prevented
  • Describe the training requirements for food safety and HACCP
  • Outline the main principles of food microbiology including temperature control, toxins, and spores
  • Describe the facilities required in a food premises and the design & construction requirements of a food business.
  • Describe the role of a supervisor and an environmental health officer in a food poisoning investigation.

For remote training, a workbook is sent out to each candidate to complete before the course. The course is run on Zoom at a time to suit you, with the exam completed online using a remote invigilation app. Results are available immediately, certificates are emailed the same day (subject to delays due to invigilation checks).
